The bitter leaves and tart green apples in this classic salad perfectly complement the more decadent flavours of a Christmas menu.

Ingredients

2 green witlof, trimmed, leaves separated

2 small green apples, thinly sliced

1 small head frisée, outer leaves discarded

30 gm baby snow pea tendrils

80 gm roasted walnuts

Baby celery

Buttermilk dressing

125 ml (½ cup) buttermilk

2 tbsp each Kewpie mayonnaise and lemon extra-virgin olive oil, plus extra for drizzling

2½ tbsp finely chopped basil

1 garlic clove, finely chopped

Juice of 1 lime

Method

1.To make buttermilk dressing, place all ingredients in a blender, season to taste and blend until combined.

2.Place remaining ingredients in a large bowl with half of the dressing, season to taste and toss to combine. Arrange in a large bowl or serving platter, drizzle with remaining dressing and scatter over baby celery leaves.
