If you’re missing the glamorous vibes of a European summer, rest assured you can replicate it in Sydney—and we’re not just talking about Australia’s fabulous beaches and world-class restaurants. You can now find the literal taste of Italy’s world-famous Principe Prosciutto right here in Sydney’s CBD.
Hinchcliff House in near Circular Quay has partnered with the global-leading prosciutto producer, creators of the regional-exclusive Principe Prosciutto di San Daniele, for one of Sydney’s best bar experiences this summer.
If you don’t know why it’s so special, this particular cured ham can only be produced in Italy’s San Daniele del Friuli, an inland region of vast farmlands and historic, cobblestoned villages. However, the region is famed for one thing above all else: it’s ham. And now you can get it in Australia.
From November 17 to December 24, four bars and restaurants located within Hinchcliff House—Bar Mammoni, Lana, Grana and Apollonia—are each offering an exclusive Aperitivo Hour menu to celebrate this world-class delicacy.
At the centre of the menu is an elegant Principe Negroni ($26), offering a prosciutto-based twist on the venue’s most popular cocktail. In addition to the festive red Campari and Vermouth, the Principe Negroni will be crafted with Widge’s Gin, fat-washed with Principe’s Prosciutto di San Daniele, giving the cocktail an umami depth. You’ll find it topped with a prosciutto garnish, of course.

In addition to this Hinchcliff-wide special, Bar Mammoni and Apollonia will be offering up a Melone Spritz ($16)—a cocktail twist on the classic rockmelon-prosciutto flavours—and a Monte Highball ($12), served with a fig crostini and prosciutto butter.
The cocktail menu is complemented by a range of prosciutto appetisers, with each venue introducing their own spin on Principe Prosciutto. Here’s what you’ll find at each:

Apollonia
The underground Sicilian cocktail bar seems like the perfect place to indulge in a post-work Aperitivo. On top of the aforementioned trio of cocktails (Principe Negroni, Melone Spritz and Monte Highball), Apollonia is offering a Raviolo Fritto (fried ravioli) layered with truffle honey, quattro formaggi and Principe prosciutto.
When: 17 November to 24 December, Monday to Wednesday, 4pm-12am, Thursday to Saturday, 3pm-1am, and Sundays, 4pm-1pm
Bar Mammoni
For a more casual cocktail hour, the indoor-outdoor Italian deli and pasta bar is slinging three prosciutto-inspired cocktail specials in the lead-up to Christmas. You’ll also find some street-style snacks in the form of Principe prosciutto bao sandos, prosciutto e rucola pizza, porcini arancini and prosciutto schiacciata. The affordable bites range from $7.50 to $28.

Grana
Hinchcliff House’s all-day Italian eatery is offering the same decadent Raviolo Fritto as Apollonia, plus the Principe Negroni and Melone Spritz. Additionally, it’s offering a scrumptious-sounding summer side dish of sliced Principe Prosciutto with rockmelon, sorrel & mascarpone

Lana
Elegant Italian-Asian fusion spot Lana is treating patrons to a luxe Principe Prosciutto trolley. Prosciutto di San Daniele is served tableside with Saltbush focaccia and whipped ssamjang butter. There’s also a Principe-inspired entree of grilled Abrolhos scallop topped with puttanesca and Principe Prosciutto-infused XO.
